Cleaver & Co began with a simple idea
To create a local butcher shop built on care, quality, and community.
That foundation was laid by Lachy and Jess, who built something people could rely on. A place where customers knew they were getting honest product, prepared properly, by people who cared about their craft.
That standard is something we deeply respect.
And it is something we intend to carry forward.
A new chapter, built on the same values
Today, Cleaver & Co Quality Meats is owned by Greg and Lisa.
Alongside the butcher shop, they operate a farm in Kangaroo Valley, where they raise and finish cattle with a strong focus on responsible land management, animal care, and long-term sustainability.
That connection to farming is not separate from the shop.
It shapes how we think about everything.
Because when you are closer to the source, your standards naturally change.
How we approach what we do
Some of our products come directly from our farm. The rest is sourced from suppliers we trust, chosen for how they raise, handle, and deliver their product, not simply for convenience or cost. Everything is prepared by our team of butchers. No unnecessary shortcuts. No overcomplication. Just proper handling, done with care and attention.
